Thief Street - Grill And Waffle is the brainchild of Manchester Chef Jon Green, the spark of an idea developed and put into practice from a Chorlton apartment during covid lockdown of 2020.
A chef of 17 years, Jon worked predominantly in the casual dining scene during the Manchester food boom for the likes of Troff, The Lead Station, Pen and Pencil, Sugo, Refuge and Australasia, before taking position as Head Chef at family run restaurant 'Globe' in Chorlton, Manchester. Here he was given free reign to develop the menu from scratch and putting his love of globally inspired flavours and small plates to practice, he developed a menu that helped the restaurant achieve the number one spot in Manchester on TripAdvisor!

By 2020 Jon was beginning to formulate the early plans, along with a desire to now work for himself, of a streetfood concept. Combining the idea of retro style, handmade potato waffles with restaurant quality toppings was proving an interesting twist on the already popular American chicken, waffles and loaded fries scene. Now faced with a 4-month lockdown, Jon and partner Ellen Birchenough decided to bring the idea to reality. Buying enough equipment to start selling the concept as a takeaway from their flat they started monthly takeaway nights. With the help of friend and Chef Kieran Clark and Jon's brother Stephen Devlin the takeaway nights really took off and Thief Street was officially out of the blocks!

Fast forward 2 years, and we'd held our first residency at The Spoon Inn feeding the people of Chorlton, then soon branched out into markets and events (which was a hugely fun time for our expanding team!). We traded our globally inspired street boxes at the likes of Grub, Levy Market and Laughterama at the Castlefield Bowl to name but a few.

These days however, we're chuffed to have expanded our residencies to three sites across Greater Manchester - The Produce Hall in Stockport, Gasworks Brew Bar in Manchester's city centre, and The Dockyard Media City in Salford Quays.
